Mushroom Bacon Swiss Cheeseburgers

These burgers are a total flavour bomb – a umami explosion of happiness! Crispy Bacon, Garlicy Thyme Mushrooms, & Melted Swiss Cheese, all wrapped up in a Buttery Brioche Bun. HEAVEN! Make these burgers y’all! 

Mushroom Bacon Swiss Cheeseburgers

Makes 4 burgers (for hungry people)

Burgers!

½ pound smoked bacon

2 pounds ground chuck (80/20)

1 tablespoon butter

Sea salt & freshly cracked black pepper

4 slices Swiss cheese

1 cup baby arugula leaves

4 brioche buns, split & toasted 

Killer Mayo (yes please!)

1 cup your fav mayo

1 garlic clove, minced

1 tablespoon freshly squeezed lemon juice

1 tablespoon chopped fresh basil leaves

1 tablespoon chopped fresh flat-leaf parsley

Pinch of ground cayenne

Sea salt & freshly cracked black pepper

Garlic Thyme Mushroom Deliciousness

2 tablespoons butter

8-ounces mixed mushrooms, sliced

1 tablespoon fresh thyme leaves, picked & chopped

2 garlic cloves, minced

Sea salt & freshly cracked black pepper

  1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  2. Lay the bacon on the prepared baking sheet in a single layer, then bake for 25 – 30 minutes (flipping halfway through) until crispy & golden. Set aside.
  3. While the bacon is cooking, crack on with the Killer Mayo and Mushrooms. In a large bowl combine all the mayo ingredients and stir to mix. Cover with plastic wrap & chill in the fridge until it’s burger building time. Easy Peasy. 
  4. Mushrooms! Heat a large non-stick pan over medium-heat and melt the butter. When melted, add the garlic and cook for 30 seconds (keeping close watch that it doesn’t burn), then stir in the mushrooms and thyme. Season with salt and pepper, toss to mix, then cook, stirring often, until the mushrooms are browned (6 – 8 mushrooms). Set aside.
  5. Burger time. Shape the beef into patties that are slightly larger than the width of the bun as they’ll shrink when cooking. Season both sides liberally with sea salt and pepper, then place a thumbprint in the center of each patty.
  6. Heat a pan over medium-high heat and melt the butter. When melted, add the burger patties and cook for 4 to 5 minutes per side for medium-cooked burgers (cook longer if you like your burgers more well done). When there is about 1 minute of cook time remaining, top each burger with a slice of Swiss cheese.
  7. Build the burgers with 1 tablespoon mayo, a burger patty, bacon, mushrooms, and fresh arugula. Top the burger with another hit of that killer mayo and Eat Delicious!
