Classic Blackberry Fool
Dessert Time!!
This dessert is a freakin rockstar and chock-full of classic comfort. Quick, easy, & delicious – AND ready in about 30 minutes y’all! If friends or family pop around, this Blackberry Fool comes together like a dream. The best part – it works with fresh or frozen blackberries, so it’s incredible any time of the year. Awesome.
Classic Blackberry Fool
Makes 6 to 8 servings
500 grams blackberries (fresh or frozen)
½ cup sugar
½ teaspoon vanilla extract
Juice & zest of 1 lemon
1 ⅓ cups heavy (whipping) cream
1 cup Greek yoghurt
1 tablespoon maple syrup
Fresh mint, for garnish
- Heat a saucepan over medium-heat and add the blackberries, sugar, vanilla, and juice of 1 lemon, and stir well to combine.
- Bring the mixture to a simmer and cook for 4 – 5 minutes, until the berries have softened but still hold their shape. Remove from the heat and set aside.
- In the bowl of a stand mixer (or armed with a whisk & forearm strength), whip the cream until thick and glorious. Fold in the yoghurt, lemon zest, and maple syrup, mixing well. Fold in ½ of the blackberry juice. Beautiful!
- Build the desserts in glasses by layering the cream mixture and blackberry mixture, about 2 tablespoons of each at a time, until the glasses are just about full (reserving about 1 cup of blackberry mixture for topping). Top each dessert with the reserved blackberries, then garnish with fresh mint. Serve & Eat Delicious!
