Guinness Braised Pork Carnitas

Rub
1 tablespoon dark brown sugar
Zest of 1 lime, grated on a microplane
Zest of ½ orange, grated on a microplane
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
2 teaspoons smoked paprika
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/2 tablespoon sea salt
2 teaspoons cracked black pepper
1 X 6-8 pound bone-in pork shoulder
2 tablespoons neutral oil
2 large onions, diced
¼ cup minced chipotle peppers in adobo sauce
6 garlic cloves, minced
1 cup orange juice
Juice of 2 limes
2 bay leaves
1 ½ cups chicken stock
1 X 14.9 ounce can Guinness Draught
Sea salt and freshly cracked black pepper

In a bowl, combine the brown sugar, lime & orange zest, spices, salt, and pepper, and mix well. Coat the pork shoulder entirely with the spice mixture, then place in a large bowl or zip-top freezer bag and let marinade in the fridge for 12 hours (or overnight).
When ready to cook, preheat an oven or grill to 325 degrees F.
Heat a large oven-safe, deep pan over medium-heat and add the oil. When hot, place the pork shoulder in the pan and brown on all sides, about 5 – 6 minutes per side. Add the onion, chipotle peppers, and a pinch of salt, and cook until the onion is softened, about 5 – 6 minutes. Add the garlic and cook for 30 seconds, stirring, then pour in the orange juice, lime juice, stock, Guinness Draught, add the bay leaves and a pinch of salt, then add the browned pork shoulder to the mixture. Transfer to the oven or grill and let cook low and slow until the pork is fork tender and easily shreddable, about 5 – 6 hours, basting with the cooking liquid every 45 minutes or so. Rest the meat for at least 30 minutes before shredding.
Transfer to a board, remove the bone, then shred with two forks. Add some of your braising liquid to the pork, mix well, then serve over corn tortillas with all of your favourite taco toppings. Delicious!
