Herb, Roasted Garlic, and Parm Bread Dipping Oil 

1 head garlic  
1 cup olive oil, plus more for drizzling garlic
2 tsp balsamic vinegar 
Zest of 1 lemon 
2 teaspoons lemon juice 
4 green olives, minced
2 teaspoons parsley, minced 
1 red chili, diced (or less if you’re not into spicy) 
1 teaspoon dried oregano 
1/4 cup grated parm 
Sea salt and cracked black pepper 

Preheat an oven 400 degrees F. Slice about 1/8th inch from the top of the garlic bulb. Drizzle with oil, season, wrap in foil, & roast for 40 – 45 minutes, until soft. Squeeze out garlic deliciousness. 

Combine your lemon zest and juice, olives, parsley, chilli, oregano, parm, & garlic, and mix into a paste. Mound, then place into the centre of a plate. Drizzle around your olive oil, balsamic vinegar, & season the oil with sea salt & fresh cracked black pepper. Done. Served with warm bread and enter carb heaven.
