Marinated Portobello Mushroom Burgers 

FoodSaver Marinated Portobello Mushroom Burgers 

Makes 4 burgers 

Marinated Mushrooms 

4 large portobello mushrooms 

2 tablespoons soy sauce 

1 tablespoon balsamic vinegar 

2 tablespoons olive oil 

2 tablespoons fresh lemon juice 

1 tablespoon pure maple syrup 

2 teaspoons smoked paprika 

2 garlic cloves, minced

Zest of 1 lemon, grated on a microplane 

Harissa Mayo

½ cup mayo 

2 tablespoons prepared harissa paste

1 tablespoon fresh squeezed lemon juice 

Sea salt

To Build Your Burgers 

1 small red onion, sliced 

1 tomato, sliced

4 burger-sized lettuce leaves 

4 brioche-style burger buns, split and toasted

First, marinate your portobello mushrooms. Arrange your mushrooms in a Foodsaver Marinade and Preserve Container. In a small bowl, combine the remaining marinade ingredients, whisk until combined, then pour over the mushrooms. Cover with the lid, turn the knob to the marinade option, then use your Handheld Vacuum Sealer to lock in all that incredible flavor. Let marinade for about 15 – 20 minutes.  

Preheat a grill over medium-high heat. Place the mushrooms directly on the grill grates and cook for 5 – 7 minutes per side, or until tender. 

While the mushrooms are cooking, prepare the harissa mayo. Combine all of your ingredients in a medium bowl and mix until smooth. Season with sea salt to taste. 

Build your burgers on toasted brioche buns with a generous tablespoon of mayo, lettuce, a grilled mushroom, tomato, red onion, and more spicy mayo. Delicious!
