Guinness Nitro Cold Brew Breakfast Sandwiches

5 cups flour
1 tablespoon sea salt
5 tablespoons sugar
1 tablespoon baking powder
16 tablespoons butter, frozen
¾ cup Guinness Nitro Cold Brew
1 cup buttermilk
2 tablespoons pure maple syrup
Guinness Nitro Cold Brew Sausage Patties
2 pounds best-quality ground pork
3 garlic cloves, minced
1 tablespoon toasted fennel seeds
½ teaspoon dried chili flakes
2 teaspoons smoked paprika
1 tablespoon lemon zest, grated on a microplane
¼ cup Guinness Nitro Cold Brew
Sea salt and cracked black pepper
Grapeseed Oil (or other neutral oil) for frying
To Build
½ cup your favorite mayo
8 over-easy fried eggs (one per breakfast sandwich)
8 slices of gruyere cheese
2 tomatoes, thinly sliced
Burger-sized lettuce leaves
First, make your biscuits.
Heat an oven to 400 degrees F and line a baking sheet with parchment paper.
In a large bowl, combine the flour, sea salt, sugar, and baking powder, and mix well. Using a box grater, grate 10 tablespoons of the butter into the flour mixture. Using your hands, gently work the butter into the flour mixture. Add the Guinness Nitro Cold Brew and buttermilk and gently mix until a soft dough forms (be careful not to overwork the dough).
Turn the mixture out onto a floured surface, then shape the dough into a 2-inch thick square. Cut out 8 breakfast sandwich-sized biscuits, then transfer onto the prepared baking sheet. Bake for 20 minutes. Meanwhile, melt the maple syrup and remaining butter together. Baste the tops of each biscuit with the butter mixture, then bake for an additional 10 minutes, or until golden and cooked through.
In a medium bowl combine the pork, garlic, spices, lemon zest, and Guinness Nitro Cold Brew, and season well with a pinch or two of sea salt and freshly cracked black pepper. Mix well, then divide into 8 equal burger-sized patties and chill in the fridge for 20 minutes.
Heat a skillet over medium-heat and, working in batches as necessary, fry the sausage patties until golden and crisp on the outside and cooked through on the inside.
Build your breakfast sandwiches on split Nitro Cold Brew Biscuits with a heaped tablespoon of mayo, a sausage patty, melted cheese, tomato, and lettuce. Slàinte, everyone!
