Blackened Bluehouse Side of Salmon with Black Bean, Corn, and Avocado Salsa

Makes 6 – 8 servings 

Blackened Bluehouse Side of Salmon 

1 whole Bluehouse Side of Salmon 

2 garlic cloves, minced

2 tablespoons smoked paprika 

1 teaspoon dried oregano 

¼ teaspoon cayenne pepper 

1 tablespoon dark brown sugar 

Zest of 2 limes, grated on a micro-plane 

3 tablespoons olive oil 

Sea salt and freshly cracked black pepper 

Black Bean Salsa

2 cups cooked black beans 

1 ½ cups cooked corn 

1 medium red onion, diced 

1 ripe tomato, diced  

1 red bell pepper, diced 

2 avocados, peeled and cubed 

Small bunch of cilantro, minced  

4 tablespoons fresh squeezed lime juice 

Sea salt and freshly cracked black pepper 

To serve 

1 ½ cups halved cherry tomatoes

Extra Cilantro, Limes, and Avocado 

1. Heat a grill over medium-high heat (about 400 degrees F), and line a large baking sheet with parchment paper. 

2. In a small bowl, combine the garlic, spices, brown sugar, lime zest, and olive oil, and season well with sea salt and freshly cracked black pepper and mix. Place the salmon on the prepared baking sheet, skin-side down, and generously coat the top of the fish with the spice mixture. Transfer to the preheated grill and roast, lid closed, for about 20 minutes, or until nicely charred, golden, and cooked through (with a little pink still remaining on the inside of the fish). 

3. While the salmon is cooking, prepare your black bean salsa. Combine the black beans, veggies, cilantro, and lime juice, then mix and season with sea salt and freshly cracked black pepper to taste. Perfect! 

4. Serve your beautiful roasted Blackened Bluehouse Salmon with Black Bean salsa, sliced cherry tomatoes, and extra avocado, cilantro, and lime halves. Delicious!
