Lemony Garlic Tuna & Asparagus Pasta

Makes 4 – 6 servings

1 pound bucatini (or spaghetti)

2 X sleeves Starkist EVOO Wild Yellowfin Lemon Pepper Tuna

1 tablespoon butter

1 tablespoon olive oil

1 teaspoon dried red chili flakes

3 garlic cloves, minced

1 bunch asparagus, cut into ½-inch pieces

½ cup peas (fresh or frozen)

Juice of 1 lemon

¼ cup finely grated parmesan cheese

¼ cup basil leaves

Extra lemon wedges, to serve

Sea salt & freshly cracked black pepper

Bring a large stockpot of well salted water to a rapid boil. Cook the pasta according to the package instructions (al dente, please). Drain, reserving ½ cup of pasta cooking liquid. Perfect.

Meanwhile, melt the butter and olive oil together in a large skillet over medium-heat. Add the chili flakes and bloom for about 1 minute, then add the garlic and cook for 30 seconds (keeping a close watch that it doesn’t burn). Add the asparagus, season with a pinch of sea salt and cook, stirring often, for 4 – 5 minutes until just fork tender. Add the reserved pasta water, peas, and lemon juice and bring to a simmer. Season with salt to taste.

Toss in the cooked pasta, Starkit EVOO Tuna, parmesan cheese, and basil leaves, and mix well. Add a generous portion of freshly cracked black pepper, then plate up and top with fresh basil leaves. Delicious!
