Guinness Nitro Cold Brew Chicken & Waffles

Guinness Nitro Cold Brew Waffles

Makes 6 – 8 servings

4 tablespoons unsalted butter, melted 

1 cup buttermilk 

1 cup Guinness Nitro Cold Brew Coffee beer

2 large free-range eggs, beaten  

1 ½ teaspoons pure vanilla extract 

2 ¼ cups all-purpose flour 

½ teaspoon sea salt 

1 ¼ teaspoons baking soda 

3 tablespoons sugar 

1 teaspoon cinnamon 

⅛ teaspoon cardamom 

Pure Maple Syrup, for serving

Extra Melted Butter, for serving 

Guinness Nitro Cold Brew Fried Chicken

3 pounds chicken legs & thighs, skin on 

1 X can Guinness Nitro Cold Brew Coffee beer

1 ½ cups buttermilk 

2 ½ cups all-purpose flour 

1 teaspoon freshly cracked black pepper

½ teaspoon smoked paprika 

½ teaspoon garlic powder

1 teaspoon chili powder

¼ teaspoon ground cayenne 

Sea salt 

Oil for frying 

First, marinade the chicken. In a large bowl, combine Guinness Nitro Cold Brew Coffee beer, buttermilk, and a large pinch of sea salt, and marinade at least 4 hours (or up to overnight). 

Next, prepare the waffles. Preheat a waffle maker according to your manufacturer’s instructions. Preheat your oven to 225 degrees F. Perfect. 

Grab 2 large bowls. In one, combine the flour, sea salt, baking soda, sugar, and cinnamon. In the other, combine the melted butter, buttermilk, Guinness Nitro Cold Brew Coffee beer, eggs, and vanilla, and whisk to mix well. Whisk the wet mixture into the dry, mixing until just combined (be careful not to over-whisk). Working with about ½ cup at a time (or to your waffle makers manufacturer’s instructions), cook your waffles until golden, crisp, and perfect. Transfer cooked waffles to a baking sheet in your preheated oven to keep warm while you crack on cooking the remaining waffles. 

Meanwhile, prepare the fried chicken. Heat 3-inches of canola oil in a high-sided Dutch oven until a thermometer reads 350 degrees F. 

In a large bowl, combine the flour, spices, salt, and pepper, and mix well. Working in batches, dredge the chicken pieces until completely coated in the flour mixture. Again, working in batches, fry the chicken, turning every few minutes, until crispy, golden, and cooked through to an internal temperature of 165 degrees F (about 12 – 15 minutes)
