Salmon Tartare, Smashed Avocado, and Boursin Stacks

‘Tis the season for festive happiness. For me, some of my favourite moments during the holiday season my crew gathered around a big board of flavour-packed crostinis. Quick & easy to throw together, so fun, and entirely customizable. Perfect for celebrating this season with the ones you love. 

This recipe tastes just like being next to the sea on a warm summer’s day, even in winter.  Refreshing Salmon Tartare, Smashed Avocado, and Shallot & Chive Boursin. Yes please and thank you! Make this recipe, yall! 

*Note! This recipe makes extra salmon tartare. Perfect for use in another recipe, or simply double the avocado and boursin portions for a second stack. Awesome! 

Salmon Tartare, Smashed Avocado, and Boursin Stacks

Salmon Tartare 

1 pound fresh, skinless salmon finely chopped

¼ pound cold-smoked salmon, finely chopped 

1 tablespoon minced shallot 

2 tablespoons minced chives

1 tablespoon minced dill 

1 tablespoon finely chopped capers 

1 tablespoon lemon juice 

1 tablespoon dijon mustard 

1 tablespoon extra virgin olive oil 

Sea salt & freshly cracked black pepper  

Smashed Avocado 

2 ripe avocados, peeled 

1 tablespoon lemon juice 

Sea salt and cracked black pepper 

Stacks 

1 X Shallot & Chive Boursin 

1 baguette, sliced and toasted (or grilled) 

Microgreens, for garnish 

1. First, prepare the salon tartare. In a bowl, combine fresh and smoked salmon, shallot, chives, dill, capers, lemon, mustard, EVOO, and season with salt and pepper. Mix well and set aside. Awesome.

2. Next, prepare the smashed avocado. In a bowl, combine the avocado, lemon, and season with salt and pepper. Smash until smooth, with a few chunks remaining for text. 

3. Grab a ring mold and place it on your serving board. Smear a layer of Shallot & Chive Boursin on the base of the ring mold. Next, add a layer of avocado, and lastly add a generous portion of salmon tartare. Carefully remove the ring mold, then garnish with microgreens. Serve immediately with toasted baguette. Delicious!
