Mushroom & Pancetta Crostinis with Garlic & Fine Herbs Boursin

‘Tis the season for festive happiness. For me, some of my favourite moments during the holiday season my crew gathered around a big board of flavour-packed crostinis. Quick & easy to throw together, so fun, and entirely customizable. Perfect for celebrating this season with the ones you love. 

This recipe is an umami-packed flavour bomb. Crispy pancetta, garlicky thyme mixed mushrooms, and just crazy delicious Garlic & Fine Herbs Boursin. Seriously?! How great is Boursin! Check out all of the incredible flavours here

Mushroom & Pancetta Crostinis with Garlic & Fine Herbs Boursin 

150 grams diced pancetta 

1 tablespoon butter

1 pound mixed sliced mushrooms, as many kinds as possible 

1 teaspoon fresh thyme leaves, minced 

1 shallot, minced 

2 garlic cloves, minced 

1 tablespoon lemon zest, grated on a microplane 

¼ cup dry white wine 

1 baguette, sliced and toasted  

1 X Garlic & Fine Herbs Boursin 

Sea salt 

Freshly cracked black pepper 

Microgreens, to garnish

1. Heat a large skillet over medium-heat, and add the pancetta. Cook, stirring often until crisp and golden. Remove with a slotted spoon, leaving the fat in the skillet. Add the butter and melt. When melted, add the mushrooms and thyme, season with a pinch of salt, and toss to combine. Cook, stirring often, the mushrooms have softened and started to turn golden. Stir in the garlic, shallot, and lemon zest, and cook 3 more minutes. Stir in the wine, the cooked pancetta, and season with a good pinch of cracked black pepper. 

2. Build your crostinis on toasted baguette with a swipe of Garlic & Fine Herbs Boursin, a hearty portion of pancetta mushrooms, and garnish with microgreens. Delicious!
