Duck Confit, Red Onion Jam, and Boursin Crostinis

‘Tis the season for festive happiness. For me, some of my favourite moments during the holiday season my crew gathered around a a big board of flavour-packed crostinis. Quick & easy to throw together, so fun, and entirely customizable. Perfect for celebrating this season with the ones you love. 

This recipe is an absolute knockout. Savory, shredded duck confit, sweet red onion jam, pomegranate, and our hero ingredient, Cranberry Pepper Boursin. Yes Please! I absolutely love this dish! Just an absolute flavour-bomb. Check out all of the incredible Boursin flavours here

Make this recipe, yall! 

Duck Confit, Red Onion Jam, and Boursin Crostinis 

Makes 6 – 8 servings, as an appetizer 

4 ready-to-cook duck confit legs 

3 red onions, sliced 

2 garlic cloves, minced 

2 tablespoons butter 

¼ cup sugar 

¼ cup dry red wine 

1 tablespoon apple cider vinegar 

Zest of 1 lemon 

1 X Cranberry Pepper Boursin  

1 baguette, sliced thin

Olive oil 

¼ cup pomegranate arils 

Sea salt and cracked black pepper 

1. First, make the onion jam. Heat a 3-quart saucepan over low-heat, and melt the butter. When melted, add the onions, garlic, and sugar, and season with sea salt. Stir well, cover, and cook over until softened and starting to caramelize. Remove from the heat and stir in the red wine, vinegar, and lemon zest. Set aside. 

2. Preheat an oven to 350 degrees F.  

3. Line a baking sheet with parchment paper. Add the duck legs, skin-side up, and transfer to the grill. Cook for about 8 – 10 minutes, until the skin is starting to crisp and the meat easily breaks apart with a fork. Shred the meat with 2 forks. Perfect. 

4. Meanwhile, drizzle each slice of baguette with olive oil and season with a pinch of salt and pepper. Grill until grill marks develop, and the bread turns golden. If you don’t have a grill, toast until golden, 

5. Build your crostinis with shredded duck, red onion jam, Cranberry Pepper Boursin, pomegranate, and grilled baguette. Delicious!
