Mediterranean Tuna Wellness Bowl
Makes 4 servings
Crispy Smoked Paprika Chickpeas
1 X ounce can chickpeas, drained & rinsed
1 tablespoon olive oil
½ teaspoon smoked paprika
½ teaspoon sea salt
Garlic Lemon Quinoa
1 tablespoon olive oil
1 cup uncooked quinoa
2 garlic cloves, minced
Zest of 1 lemon
2 cups vegetable stock
Tomato Cucumber Basil Salad
½ English cucumber, diced
2 large tomatoes, diced
½ small red onion, finely diced
¼ cup minced basil leaves
1 tablespoon freshly squeezed lemon juice
Sea salt & cracked black pepper
To build your Tuna Wellness Bowls
4 X 2.6 ounce pouches StarKist E.V.O.O. Wild-Caught Yellowfin Tuna
1 tablespoon freshly squeezed lemon juice
1 garlic clove, minced
½ teaspoon cracked black pepper
½ cup kalamata olives
1 cup hummus
Fresh basil & flat-leaf parsley leaves, for garnish (and deliciousness)
- Preheat an oven to 400 degrees F. Line a baking sheet with parchment paper.
- First, prepare the crispy chickpeas. Pour the chickpeas onto the prepared baking sheet, then drizzle over the olive oil, add the smoked paprika and salt, and mix well. Bake for 25 – 30 minutes, giving the pan a toss a few times throughout the cooking process, until crispy and golden.
- Meanwhile, prepare the quinoa. Heat a saucepan over medium-heat and pour in the olive oil. When the oil is shimmering, add the quinoa and cook, stirring constantly, until quinoa is coated in oil and starting to smell fragrant. Add the garlic, lemon zest, and stock, season with sea salt and cracked black pepper, then cover and bring to a boil. Reduce the heat to medium low and cook until fluffy and perfect, 15 – 20 minutes.
- In a medium bowl, combine the cucumber, tomato, red onion, basil, and lemon juice, and season with sea salt and pepper to taste. Set aside.
- Tuna time. Open those beautiful pouches of StarKist E.V.O.O. Wild-Caught Yellowfin Tuna and place tuna flesh in a bowl. Add garlic, lemon, and pepper, and mix. Quick/Easy/Delicious!
