Field Roast Burgers with Garlic Thyme Mushrooms, Caramelized Onions, and Chao Cheese (#ad) 

Burgers 

4 X Field Roast Field Burgers 

1 tablespoon olive oil 

4 slices Chao cheese 

4 X burger-sized lettuce leaves 

4 X brioche buns, toasted 

Garlic & Thyme Mushrooms 

2 tablespoons olive oil 

8 -ounces cremini mushrooms, sliced

2 teaspoons fresh thyme leaves, chopped

2 garlic cloves, minced 

Sea salt and fresh cracked black pepper 

Caramelized onions 

2 tablespoons olive oil 

3 medium Spanish onions, thinly sliced 

Sea salt and fresh cracked black pepper 

Herb-Spiked Mayo 

1 cup vegan mayo 

1 tablespoon freshly squeezed lemon juice 

1 tablespoon finely chopped basil leaves 

1 tablespoon finely chopped flat-leaf parsley leaves 

1/4 teaspoon ground cayenne pepper

Sea salt and fresh cracked black pepper 

1. First, make the onions. 

2. Heat a 3-quart saucepan over medium heat and add the olive oil. When hot, add the onions, season with sea salt and pepper, then cover with a lid. Reduce the heat to  medium low and cook, giving the onions a toss every now and again, for 30 – 40 minutes, or until deeply caramelized. It takes a little time and patience, but it’s well worth the effort. 

3. While the onions are cooking, prepare the mushrooms and herb-spiked mayo. 

4. Heat a large skillet over medium heat and add the olive oil. When hot, add the mushrooms, thyme, and garlic, and season with sea salt and cracked pepper. Cook, stirring every few minutes until golden brown, about 8 – 10 minutes. 

5. In a medium bowl, combine all of the mayo ingredients, season with salt and pepper, and give the lot a good mix. Set aside. Easy peasy. 

Burger time! 

6. Heat a large skillet over medium heat and pour in the olive oil. Add the Field Roast Field Burgers and cook for 3 minutes. Flip, top each patty with a slice of Chao Cheese, and cook another 3 minutes. 

7. Build your burgers on toasted brioche buns with a burger patty, caramelized onions, mushrooms, a hearty portion of herb-spiked Mayo, and a piece of crispy lettuce. Plant-based deliciousness!
