Spicy Meatball Grilled Cheese Sandwiches
This, friends. This is comfort food. Quick, easy, and just jam-packed with marinara-soaked deliciousness. Late-night eating done right. Make this recipe y’all.
Meatball Grilled Cheese Sandwiches
Makes 4 sandwiches
Meatballs
1 ¼ pounds ground beef
⅓ cup parmesan cheese
¼ cup breadcrumbs
2 garlic cloves, minced
2 tablespoons minced fresh basil leaves
1 teaspoon finely grated lemon zest
½ teaspoon dried oregano
½ teaspoon dried red pepper flakes
½ teaspoon sea salt
½ teaspoon freshly cracked black pepper
2 tablespoons olive oil
2 cups marinara sauce (homemade is best)
Sandwiches
¼ cup softened butter
8 slices sourdough bread
8 ounces fresh mozzarella cheese, sliced
¼ cup fresh basil leaves
- First, make the meatballs. In a bowl, combine beef, parmesan, breadcrumbs, garlic, basil, lemon zest, oregano, chili flakes, sea salt, and pepper, and mix well. Using the palms of your hands, shape into small 1-inch meatballs and set aside. Heat a high-sided pan over medium-heat and pour in the olive oil. When hot, add the meatballs and brown on all sides (about five minutes). Add the marinara, bring to a simmer, and cook for about 10 minutes, or until the meatballs are cooked through. Awesome.
- Sandwich time. Liberally butter the outside of each piece of bread. Coat the inside of each piece of bread with about a tablespoon of marinara, then top with meatballs and sliced cheese. Add a few basil leaves, coat the second piece of bread with marinara, then sandwich. Easy peasy.
- Heat a large cast iron pan over medium-heat. When hot add the sandwiches and cook until golden brown. Flip, cover with a lid, and cook until the cheese has melted. Yes please and thank you. Serve immediately. Delicious!!
