Spiced Beef Hummus
Makes 4 – 6 servings (as a main)
Beef
2 tablespoons grapeseed oil
1 large Spanish onion, finely diced
3 garlic cloves, minced
1 pound ground chuck
2 teaspoons ground cumin
1 teaspoon ground cinnamon
1 teaspoon Aleppo pepper
1 teaspoon smoked paprika
½ teaspoon allspice
Sea salt and cracked black pepper
Hummus and Salad
2 cups hummus (homemade is best – recipe here)
1 cup diced English cucumber
2 plum tomatoes, diced
3 radishes, diced
2 tablespoons extra-virgin olive oil
Zest of 1 lemon
Juice of 1/2 lemon
3 green onions, finely diced
Flat-leaf parsley, for garnish
Toasted pita chips, to serve
- First, prepare the hummus. Homemade is quick and easy, and SO much better than store-bought. Awesome.
- Beef time. Heat a large skillet over medium-heat, and pour in the oil. When hot, add the onion, season with a small pinch of salt, and cook until softened and translucent, about 6 – 8 minutes. Stir in the garlic and cook for 30 seconds, then add the beef and spices, and season with a pinch of salt and pepper. Cook, breaking up the beef with a wooden spoon, until it is cooked through and starting to get nice and crispy, about 8 – 10 minutes. Set aside. Taste and adjust seasoning as necessary.
- Salad time. In a bowl, combine the cucumber, tomato, and radish. Add the olive oil, lemon zest and juice, season with salt and pepper, and toss to combine. Done.
- Spread the hummus onto a serving platter, then top with the spiced beef. Sprinkle over the green onions, garnish with parsley, and serve with your salad, toasted pita chips, and extra lemon. Delicious!!
