Crispy Sweet Chili Tofu Bowls

Noodle Bowls are mealtime perfection. They’re absolutely jam-packed with flavour, easily customizable, and come together in mere minutes. So awesome! This recipe’s hero is crispy glazed tofu, and a guaranteed winner (even the biggest carnivore in your crew will love it).
Time Saving Tip! The tofu can be breaded the night before, covered and stored in the fridge. Then just remove and bake at mealtime, and dinner’s on the table in 30 minutes. Awesome!
Crispy Sweet Chili Tofu Bowls
Makes 4 servings
Crispy Tofu
400 grams firm tofu, cut into ½ inch cubes
2 eggs, lightly whisked
1 cup all-purpose flour
1 1/2 cups panko bread crumbs
Zest of 1 lime
1 teaspoon sea salt
1 ½ cups vegetable stock
1 tablespoon cornstarch
1 teaspoon toasted sesame oil
2 tablespoons soy sauce
2 tablespoons garlic chili sauce
2 tablespoons maple syrup
1 tablespoon rice wine vinegar
2 tablespoons toasted sesame seeds
Bowls
400 grams (12 ounces) rice noodles
½ an English cucumber, sliced
2 large carrots, julienned
1 cup snap peas
¼ cup green onions, thinly sliced
Cilantro, for garnish (and deliciousness)
Hot sauce, for serving (if you like it spicy)
- Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
- Grab 3 medium bowls. In one add the flour, in another the whisked eggs, and in the last bowl combine panko bread crumbs, lime zest, and salt.
- Working one piece at a time, dredge the tofu pieces in the flour, then coat in the egg wash, and lastly toss in the bread crumb mixture, making sure that each piece is completely coated. It takes a little time, but it’s well worth the effort.
- Arrange the tofu on the prepared baking sheet and bake for 30 minutes, turning the tofu halfway through, until crispy and golden brown.
- While the tofu is baking, crack on with the sauce. Combine vegetable stock, cornstarch, sesame oil, soy sauce, garlic chili sauce, maple syrup, and rice wine vinegar in a large bowl and whisk to mix well. Transfer to a medium saucepan and cook over medium heat until glossy, thickened, and beautiful.
- While the sauce is thickening and the tofu is baking, prepare the noodles according to package directions. Easy peasy.
- Toss the tofu in the sauce, getting each piece completely coated, and sprinkle over the sesame seeds (Salt Bae style please)
- Divide the noodles into 4 large bowls and top with that beautiful crispy tofu. Divide the sliced & diced veggies into the bowls, then garnish with cilantro. If you like it spicy, serve with a side of your favorite hot sauce. Crispy Deliciousness!
