Ingredients

  • 3 lbs pork shoulder
  • 1 tbsp kosher salt
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 bottle Guinness stout
  • 1 orange, juiced
  • 4 cloves garlic, smashed
  • 1 large yellow onion, quartered
  • 2 bay leaves
  • Flour tortillas, for serving
  • Radish, cilantro, lime to garnish

Instructions

  1. Pat the pork dry and season generously with salt, cumin, and smoked paprika.
  2. Heat oil in a heavy Dutch oven over medium-high. Sear pork on all sides until deeply browned.
  3. Add onion, garlic, bay leaves, orange juice, and pour in the Guinness. Bring to a simmer.
  4. Cover and braise at 325°F for 2.5–3 hours, until fork tender.
  5. Shred pork with two forks, discard bay leaves, and simmer uncovered 10 more minutes.
  6. Serve on warm tortillas with radish, cilantro, and a squeeze of lime.
