Ingredients
- 3 lbs pork shoulder
- 1 tbsp kosher salt
- 2 tsp ground cumin
- 1 tsp smoked paprika
- 1 bottle Guinness stout
- 1 orange, juiced
- 4 cloves garlic, smashed
- 1 large yellow onion, quartered
- 2 bay leaves
- Flour tortillas, for serving
- Radish, cilantro, lime to garnish

Instructions
- Pat the pork dry and season generously with salt, cumin, and smoked paprika.
- Heat oil in a heavy Dutch oven over medium-high. Sear pork on all sides until deeply browned.
- Add onion, garlic, bay leaves, orange juice, and pour in the Guinness. Bring to a simmer.
- Cover and braise at 325°F for 2.5–3 hours, until fork tender.
- Shred pork with two forks, discard bay leaves, and simmer uncovered 10 more minutes.
- Serve on warm tortillas with radish, cilantro, and a squeeze of lime.
