Ingredients

  • 4 salmon fillets, skin on
  • Olive oil
  • Kosher salt, black pepper
  • 1 lemon, zest and juice
  • 1 cup mixed fresh herbs (parsley, dill, chives)
  • 1 small garlic clove
  • 1/3 cup good olive oil
  • Lemon wedges to serve

Instructions

  1. Pat salmon skin completely dry. Season generously with salt.
  2. Heat oil in a nonstick skillet over medium-high. Place salmon skin-side down.
  3. Press gently and cook without moving, 6–7 minutes until skin is deeply crisp.
  4. Flip and cook 1–2 minutes more.
  5. Blend herbs, garlic, zest, juice, and olive oil until vibrant. Season.
  6. Serve salmon over herb oil with lemon wedges.
