Ingredients
- 4 salmon fillets, skin on
- Olive oil
- Kosher salt, black pepper
- 1 lemon, zest and juice
- 1 cup mixed fresh herbs (parsley, dill, chives)
- 1 small garlic clove
- 1/3 cup good olive oil
- Lemon wedges to serve

Instructions
- Pat salmon skin completely dry. Season generously with salt.
- Heat oil in a nonstick skillet over medium-high. Place salmon skin-side down.
- Press gently and cook without moving, 6–7 minutes until skin is deeply crisp.
- Flip and cook 1–2 minutes more.
- Blend herbs, garlic, zest, juice, and olive oil until vibrant. Season.
- Serve salmon over herb oil with lemon wedges.
