Ingredients

  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups buttermilk
  • 2 eggs
  • 4 tbsp melted butter, plus more for cooking
  • 8 strips thick-cut bacon
  • 1/4 cup maple syrup

Instructions

  1. Heat oven to 400°F. Arrange bacon on a rack over a sheet tray. Bake 15 minutes, brush with maple syrup, bake 5 more minutes.
  2. Whisk dry ingredients. In another bowl, whisk buttermilk, eggs, and melted butter.
  3. Fold wet into dry until just combined — lumps are good.
  4. Cook pancakes in butter over medium heat, 2 minutes per side.
  5. Serve with maple bacon and extra syrup.
