Buttermilk Pancakes with Maple Bacon

Ingredients
- 2 cups all-purpose flour
- 2 tbsp sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 cups buttermilk
- 2 eggs
- 4 tbsp melted butter, plus more for cooking
- 8 strips thick-cut bacon
- 1/4 cup maple syrup

Instructions
- Heat oven to 400°F. Arrange bacon on a rack over a sheet tray. Bake 15 minutes, brush with maple syrup, bake 5 more minutes.
- Whisk dry ingredients. In another bowl, whisk buttermilk, eggs, and melted butter.
- Fold wet into dry until just combined — lumps are good.
- Cook pancakes in butter over medium heat, 2 minutes per side.
- Serve with maple bacon and extra syrup.
