Tzatziki Tuna Patty Pita Wraps 

Tzatziki Tuna Patties 

6 pouches Starkist EVOO Yellowfin Tuna in Extra Virgin Olive Oil 

2 green onions, thinly sliced 

1 tablespoon minced fresh dill leaves

1 tablespoon minced fresh tarragon leaves 

2 garlic cloves, minced 

Zest of 1 lemon, grated on a microplane 

½ cup panko breadcrumbs 

¼ cup prepared tzatziki 

1 tablespoons freshly squeezed lemon juice 

1 tablespoon Dijon mustard 

1 free-range egg, beaten 

Sea salt and freshly cracked black pepper 

Avocado oil, for frying 

To build your wraps

Pita bread, halved 

2 cups baby spinach leaves 

1 cup prepared tzatziki 

1 cup crumbled feta cheese 

1 cup pitted kalamata olives 

1 cucumber, sliced 

Fresh dill & sliced lemons, to serve 

In a large bowl, combine your Starkist EVOO Yellowfin Tuna, green onion, dill, tarragon, garlic, lemon zest and juice, breadcrumbs, tzatziki, dijon, and your egg, then season with salt and pepper to taste. Divide and shape into 8 – 10 pita-sized patties. *Tip! These patties also make fantastic burgers – simply divide into larger patties and shape accordingly. 

Heat a large skillet over medium-heat and, working in batches as necessary, fry your patties for about 3 – 4 minutes per side, until crisp and golden brown. 

Build your pita wraps with your golden fried tuna patties, spinach, tzatziki, feta cheese, olives, cucumber, and fresh dill. Delicious!
