Lemon Coriander Smoked Paprika BBQ Chicken
For my money, summer time is without a doubt the most wonderful time of the year. It’s the reigning King of the Seasons, and it has a special knack for making absolutely everything just feel right in the world. The vibe maker. Living in the Great White Canadian North, our summer time is on the shorter side, so we need to hustle and take full advantage of every last second. And that means planning every possible meal around the grill.
Rocking a grill is the best! There is something incredibly special about cooking over an open flame, as if grilling somehow transports back to a more primal culinary time. It just feels right. The magic of grilling not only comes with being outside (though that is a sweet bonus), but in the grill itself infusing the dish with smoke and heat and creating a total next-level flavour bomb. It’s the ultimate cooking machine, and it is well worth investing quality time into perfecting the art of grilling.
One of my all-time favourite dishes is BBQ Chicken. I distinctly remember the first time I truly tasted a properly grilled chicken. I was living in beautiful Nashville, Tennessee and learning anything and everything I could about all things BBQ. The grilled chicken completely blew my mind. Moist, drenched in flavour, and sporting the crispest skin ever. I immediately got to work, doing my best to recreate this world-changing dish at home.

Lemon Coriander BBQ Chicken
1 X 4 to 5-pound chicken
1 ½ tablespoons olive oil
1 tablespoon coriander seeds, bashed in a mortar and pestle
1 tablespoon smoked paprika
1 teaspoon ground cumin
¼ teaspoon ground cayenne pepper
1 tablespoon lemon zest
1 tablespoon brown sugar
2 teaspoons kosher salt
½ tablespoons freshly cracked black pepper
¾ cup of your favourite beer
Set a grill to medium-high heat, prepared for indirect cooking.
Combine the spices, lemon zest, brown sugar, salt, and pepper in a small dish and stir together. Massage the chicken all over with 1 ½ tablespoons of olive oil, and then coat with the spice rub, covering the entire bird. Fill the KSP Epicure BBQ Chicken Roaster Flavour Cup with beer. Fit the herb cone into the cavity of the bird, and transfer the chicken on top of the flavour cup, positioning it securely in place.
Place the roaster on the grill, away from the direct heat, and cover the lid. Cook until the chicken is deeply golden brown, has beautifully crispy skin, and reads 165 degrees F with an instant-read thermometer inserted into the thickest part of the chicken thigh, for about 1 hour 15 minutes to 1 ½ hours. Prepare for the neighbourhood to have flocked to your backyard for dinner after smelling this deliciousness.
Transfer the cooked chicken to a board, and tent loosely with aluminum foil. Rest for 10 to 15 minutes before carving. Serve with all of your favourite summer time fixin’s.
