Spicy Pork & Kimchi Noodles

Noodles, thank you for everything you are.

Today was a snow day in my part of the Canadian East coast. Do snow days exist where you live? Basically for us that meant that our city was shut down today. No going anyway. Crazy amount of snow, blowing wind, all that good stuff. AKA – comfy pants, potato chips, and lots of binge watching Netflix shows. Or the perfect day, whichever suits your fancy. Snow days force me to chill. I have a tendency to go-go-go at, like, a million miles an hour, so being forced to sit in one place is much needed.

And if snow days have a best friend, it’s most definitely comfort food. Perfect to warm your chilly bones. We all have our favourite cold weather comfort food dishes. I love chilli, pizza, nachos, soup with crusty bread…..but above all, I love noodles.

Flavour country!! These noodles are jam packed with awesome. Crispy pork, kimchi, sweet & spicy deliciousness. The perfect cure for any noodle craving.

Spicy Pork Kimchi Noodles

Serves 4

1/2 lb ramen (or egg) noodles

2 + 1 tablespoons groundnut oil

½ cup red onion, finely diced

3 cloves of garlic, minced

1lb ground pork

¼ cup water

2 tablespoons fish sauce

2 teaspoons brown sugar

2 cups kimchi (homemade, or super awesome quality, like from your local Asian market) sliced into 1/2 inch chunks

½ cup green onions, finely sliced

1 – 2 red chillies, finely diced

Cook noodles according to package instructions. Drain, and toss the noodles in 1 tablespoon of oil. Set aside.

Heat a wok (or large frying pan) over medium heat. Pour 2 tablespoons of oil into the wok. Add the onions and garlic and saute for 5 minutes, stirring often. Add the pork to the pan and fry for 6 – 8 minutes, until cooked through and slightly crispy.

Pour the water, fish sauce, and brown sugar into the wok, and bring to a simmer. After 1 minute, remove the pan from the heat and toss the noodles, sliced green onions, kimchi and sauce together.

Top the noodles with sliced chilies, and serve immediately.

    God bless noodles and spicy kimchi! And all your smoker recipes are making me seriosuly want to ask my hisband for a smoker for Christmas!
