Hoisin Chicken Drummies

It’s Friday. The sun is shining. And today I ate a million drumsticks.

Well, more like 6. But, still…

We’ve all had weeks where Friday couldn’t come fast enough. The benefit of working from home (and out of a kitchen) is, well, full of awesomeness. But even when you work from home (and for yourself), there are weeks that just seem to drag on. Not bad, just long. And those kind of weeks mean easy, quick, delicious, ‘I could eat a million of these’ kind of Friday night meals. Great ingredients & very little effort.

This chicken is just that. Really easy, and SUPER delicious. Serve with some rice and a nice salad. Perfect.

**Side Note – My love for the Grill Pan**

A few years ago, I was watching an episode of the Naked Chef and saw Jamie Oliver using a grill pan, and it was a game changing moment for me. For one, I didn’t really know that these existed. And being able to grill inside during the Canadian winter was a wonderful and rare gift to be given. The nice caramelization and char that you get from these are incredible, and well worth the investment. I literally use mine almost every single day.

Hoisin Chicken Drumsticks

10 chicken drumsticks, skin on

2 tablespoons peanut oil

1/2 cup hoisin sauce

1/2 cup chicken stock

1 tablespoon soy sauce

3 teaspoons ketchup

1 teaspoon chili sauce

3 cloves of garlic, grated on a microplane

1/2 cup of peanuts, chopped

3 spring onions, diced

2 – 3 thai chilis, sliced

Preheat your oven to 425 degrees.

Heat a grill pan (or grill) to medium high. In a large bowl, toss your chicken in the peanut oil, getting it completely coated (but not dripping).

Working in batches, fry the chicken until the outsides are nice and golden brown. (10 minutes)

While your chicken is getting toastie, combine your garlic, hoisin, stock, soy sauce, ketchup, and chili sauce in a bowl.

Toss the chicken with your sauce, and pour into a deep, oven proof baking tray. Bake for 30 minutes, until a cooked through, and reading 165 degrees with a thermometer.

Top the cooked chicken with peanuts, spring onions, and chillies, and pour over any excess sauce for added deliciousness.

Done. Quick, easy, delicious.
