Beef Noodle Stir Fry

If you’re anything like me (which it’s fairly safe to say that most of you are), you love food. You love delicious food. And you love to take the time to cook delicious food. But some nights, after a long day full of surprises (*see stress), all you want to do is sit on the couch with some take-out, and go to bed after a sitcom re-run marathon.

Ok, side note – right now we’re watching Lost. Scratch that, we’re binge watching Lost. I know, 5 years after the rest of the entire world, but late to the party is better than not showing up to dance at all. Right?

Enter, the Stir Fry.

Stir Fry dishes have to be the most fantastic way to get something homemade, quick, and delicious on the table in minutes. You typically have the ingredients you need already hanging out in your fridge, and there are literally hundreds of possibilities. Score!

10 minutes to delicious.

Beef Stirfry

Serves 4

3/4lb sirloin

2 cups baby bok choy

1 zucchini, grated

1 carrot, grated

2 cloves garlic, grated

1 tbsp chuck on ginger, peeled and grated

1 red pepper

1/2 cup crushed peanuts

2 tablespoons of honey

1/2 cup soy sauce

1 tablespoon peanut oil

400 grams egg noodles

Bring a saucepan full of salted water to a boil, and cook noodles according to package directions. When you have 1 minute of cooking time left, add your bok choy to the noodles, to cook for one minute. Drain, and set aside.

Heat a wok on high, and get it blazing hot.

Slice your beef into thin strips – the thinner the better. Pour your peanut oil, and toss in your beef. Add your ginger & garlic to the wok, and toss with your beef. Fry the beef for one minute, keeping it moving with chopsticks or tongs.

Toss your red pepper, grated carrot, and zucchini in the wok, and pour in your soy. After 1 minute, drizzle in your honey. Add your noodles and bok choy to the wok, and toss together.

Serve up your noodles, and top with crushed peanut, cilantro, and lime wedges. Also beer, if you’re so inclined.

10 minutes to delicious.
